This article presents a brief history of cheese, a description of the Irish cheese industry, a history of research on cheese, the research of the author on cheese and suggested aspects of cheese that warrant further research.

Patrick Fox was conferred with a BSc in Dairying by UCC in 1959. Following postgraduate studies and postdoctoral research in the USA, he took up a research position at An Foras Taluntais, Moorepark, in 1967 and was appointed Professor of Food Chemistry at UCC in 1969. He retired in 1997 and has since been an Emeritus Professor at UCC, where he continues to supervise research and to write. Professor Fox is the author or co-author of almost 600 research and review articles in international journals and is the author or editor of 30 books on dairy-related subjects.
